Is dinner where you fail? After a long day’s work, do you love the convenience of calling in a food order and handing over some money in exchange for a piping hot bag of prepared food with utensils and napkins? Or perhaps you like to celebrate that you survived another hectic day over a glass of wine and comfort food at your favorite restaurant. And I imagine that some of you have the pizza delivery guy on speed dial for the kiddos and you opt for “grazing” the refrigerator and pantry the rest of the night.
Between family responsibilities and work, dinner can be the last thing you want to spend time or energy on. But it’s important. Yes, dinner is important. Not just for your health, but also for the opportunity to share quality time with your family and show your kids how to honor this ritual and make it healthy.
I understand the frustration of spending more than twenty or thirty minutes on a meal that is going to be eaten in less than ten. At The Healthy Edge, we work with women who like to cook and those who hate to cook, but they all acknowledge that having a plan for dinner is a huge stress reliever. My health journey is only possible because of simple solutions like The Healthy Edge Crockpot Chicken Pineapple Fajitas.
It takes less than 10 minutes to prep and your house will smell delicious. Put the following ingredients (except the pineapple) in a crockpot on low for 4-6 hours, or until chicken shreds easily and is cooked thoroughly. Put pineapple in 30 minutes before serving or until heated. If you have a family of 4 or more, double this recipe.
- 2 - 6-8 oz. organic chicken breasts
- 2 bell peppers, sliced or chopped
- 1 onion, sliced or chopped
- 3 cloves garlic, chopped
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp paprika
- ¼ tsp chili powder
- ¾ tsp ground cumin
- ¼ tsp sea salt
- 1 ½ cups pineapple
Serve these fajitas in taco shells topped with your favorite Mexican toppings. It’s also great on a bed of lettuce! Having simple dinner solutions makes healthy not only possible, but delicious. If you are looking for support for simple healthy dinner solutions, visit www.healthyedgeprep.com.
