Healthy Mason Jar Lunches

Mason jars are my new favorite way to enjoy lunch on-the-go. I just had to share this beautiful and delicious idea to get you inspired. Once you make this first recipe, I am sure your creative juices will begin to flow and I can’t wait to hear what you come up with!

The cool thing about this portable meal is you can either eat it within the jar or dump it out on a plate and enjoy. I prefer to use a shorter mason jar if I am going to eat out of the jar and a taller one if I am dumping it out onto a plate. It’s just easier to get your fork down in there with a shorter jar. If you are eating out of the jar, be sure to leave some room at the top so you can shake up the ingredients.

To get started, make a large batch of quinoa. Remember, 1 cup of quinoa yields about 3 cups cooked. This will provide enough quinoa to make many mason jar lunches OR you will have quinoa available for use throughout the week. Grab 1 avocado, 1 mango, 1 can of organic, low-sodium black beans, ¼ of a red onion and a bunch of lettuce.

MASONTo make this really yummy, choose some extras such as fresh organic tomatoes, corn, bell pepper, cilantro, walnuts, organic feta cheese, etc.

Now the FUN PART!

Begin layering these ingredients in a mason jar. I prefer to start with the quinoa and end with the lettuce, but do what you like. Adding in some leftover organic chicken or taco meat is a super delicious way to change up the flavors of the jars and add some quality protein.

This idea can serve as a quick prep on Sundays to prepare you with lunches for the whole week! Because of the variety of ingredients, you can choose to make each mason jar a bit different by adding or omitting ingredients or adding different proteins or dressings.

Here is a quick dressing recipe for Cilantro-Lime Dressing while I am at it. This should make about 6 servings.

  • 2 Tbsp. lime juice
  • 2 tsp. Apple cider vinegar
  • 2 Tbsp. cilantro, chopped
  • ½ tsp. Salt
  • ½ tsp. Honey
  • 3 Tbsp. olive oil

Simple whisk the first five ingredients together and then slowly add the olive oil while stirring. Drizzle over the contents of the jar or serve on the side.
