Avocado and Goat Cheese Bowl

Avocado and Goat Cheese Bowl

It’s time to adopt a new mindset for your health journey. Healthy isn’t hard, it’s a commitment and it’s so worth it. And just like marriage, kids, friendships, your job...it’s all about perspective and how you choose to nurture these things that determines what you create in each of these areas.

Healthy doesn’t have to be time consuming. It just has to be a priority. We all have 24 hours in a day and we all have to eat and drink and move every day ANYWAYS. Why not focus on making what you eat and drink and how you move healthy?

AvoHere at The Healthy Edge, that’s what we do. We teach people how to overcome the patterns that have held them back from achieving their best physical and emotional self. We understand the struggles of women. It can be challenging to find a way to make yourself a priority when everyone around you is demanding your time and energy.

It’s important that healthy happens, but that it’s also realistic and simple. Here’s an awesome meal option for busy women (and men) who are looking for a delicious healthy option for any meal of the day.

A great option for the Basmati rice (or rice of your choice) is to cook it in coconut milk to make it even sweeter. You can also drizzle coconut milk over cooked rice for a similar effect.

Here’s what you will need for this delicious bowl:

  • ½ - ¾ cup brown basmati rice (or your favorite whole grain rice)
  • ½ avocado, sliced
  • 2 Tbsp. Pumpkin seeds
  • ¼ cup organic goat cheese
  • Salsa (optional)

Keep it super simple when throwing this together. Begin with the rice on the bottom and add each ingredient to your bowl to create a beautiful meal for breakfast, lunch or dinner.
