A great option for the Basmati rice (or rice of your choice) is to cook it in coconut milk to make it even sweeter. You can also drizzle coconut milk over cooked rice for a similar effect.
Here’s what you will need for this delicious bowl:
- ½ - ¾ cup brown basmati rice (or your favorite whole grain rice)
- ½ avocado, sliced
- 2 Tbsp. Pumpkin seeds
- ¼ cup organic goat cheese
- Salsa (optional)
Keep it super simple when throwing this together. Begin with the rice on the bottom and add each ingredient to your bowl to create a beautiful meal for breakfast, lunch or dinner.
